Preparation
- Step 1
- In a small saucepan, cook the rice according to the package instructions. Set aside.
- Tip: If you have extra broth, you can use it for cooking the rice.
- Tip: Take advantage of this waiting time to cut, measure the recipe ingredients, and move on to step 2.

- In a large pot, heat the oil and sauté the onion, garlic, and sweet potato for 10 minutes, stirring occasionally.
- Step 3
- Add salt and stir in the curry powder, tomato soup, chicken broth, lentils, and apples.

- Bring to a boil, reduce the heat, and let simmer for 15 minutes.
