Preparation
Step 1
Heat oil in a saucepan and sauté onion and garlic for about 5 minutes. Add peppers and celery and sauté about 2 minutes.
Step 2
Add beef and fry until browned. Add spices and salt and pepper and continue cooking for 2 minutes.
Step 3
Add tomatoes, corn, and beans and bring to a boil. Simmer on low about 30 minutes or until mixture thickens. Stir several times.
Step 4
Serve in a deep dish topped with a dollop of sour cream and fresh cilantro, served with a lime wedge and oven-crisped tortillas.
