Ingredients

olive oil

onion, minced
4 cups
corn kernels, fresh or frozen (5 or 6 cobs)
1 L
3 cups
milk
750 ml
Salt and pepper
Toppings (optional)
Herbs (chives, parsley)
Cooked bacon
Cheddar, shredded

Preparation

Step 1
In a large casserole, heat the oil and sweat the onion. Add the corn kernels and continue cooking a few minutes, until coloured. Add the milk. Salt and pepper to taste. Simmer about 15 minutes, or until the kernels are tender. Using a slotted spoon, set aside about 1 cup of kernels.
Step 2
Pulse until coarsely puréed, then add the kernels.
Step 3
Add toppings to your taste.
