Preparation
- Step 1
- Preheat oven to 220°C (425°F).
- Step 2
- In large bowl, whisk together oil, thyme, vinegar, honey, salt, and pepper. Add carrots, sweet potatoes, squash, beets, onions, and garlic to bowl.
- Step 3
- Turn to coat vegetables with honey mixture. Spread vegetables on one or several baking sheet(s) in a single layer.
- Step 4
- Bake about 45 to 50 minutes until tender and lightly caramelized. Serve warm or at room temperature.
