Ingredients

- mild Italian sausages, blanched* and sliced

- chicken or vegetable broth

- Parmesan cheese, grated

Preparation
- Step 1
- In a pot, brown the sausage slices. Stir in the vegetables and brown. Add the tomatoes and broth and season. Continue cooking for 20 minutes or until vegetables are cooked through and al dente.
- Step 2
- When ready to serve, garnish with Parmesan cheese, lemon zest, and basil.
Variation
*Note: To blanch the sausages, cook for about 10 minutes in boiling water.
