Preparation
- Step 1
- Preheat oven to 190°C (375°F). Cook pasta according to package directions.
- Step 2
- In a medium saucepan, heat oil and sauté garlic, onions, and mushrooms for 3 minutes. Add broccoli and continue to cook for another 3 minutes.
- Step 3
- In a large bowl, combine cooked pasta, sautéed vegetables, chicken, pesto, lemon zest and half of the Cheddar cheese. Season to taste.
- Step 4
- Transfer mixture to an ovenproof dish and top with Parmesan and remaining cheddar. Bake for about 12 minutes, or until cheese is melted and slightly brown.
