Ingredients

- pita breads, about 8 inches in diameter
- Stuffing
- 2 cups
- mozzarella cheese, shredded
- 500 ml
- 1 cup
- marinara sauce, homemade or storebought
- 250 ml
- 1 cup
- spinach, coarsely chopped
- 250 ml
- 1 cup
- pepperoni, or other cold cuts of your choice, diced
- 250 ml
- 1/4 cup
- basil, minced
- 60 ml
- Salt and pepper to taste
Preparation
- Step 1
- In the oven
Preheat oven to 200°C (400°F).
- Step 2
- In a bowl, mix all the stuffing ingredients together, and stuff into the pitas.
- Step 3
- Place on a baking sheet lined with parchment paper. Cook in the oven about 20 minutes, or until the pitas are golden and the cheese has melted.

- Cut in two and serve.

- On the campfire
Prepare a fire with a dozen logs, and wait until they are reduced to charcoal, about 30 to 45 minutes, turning them from time to time.

- In a bowl, mix all the stuffing ingredients together, and stuff into the pitas.

- Place the pitas on a cast-iron pan, and place it on a grill over the fire. Cook about 20 minutes, turning them halfway.
- Step 8
- Cut in two and serve.
Variation
The height of the grill over the fire may vary depending on the intensity of the charcoal. Before cooking, check if it is hot enough by placing your hand 20 cm or so above the flames. The embers are hot enough when you cannot keep your hand there more than two or three seconds without burning yourself.
