Preparation
- Step 1
- Preheat oven to 180 ºC (350 ºF).
- Step 2
- Rinse and pat chicken dry. Lay it breast side up on a cutting board and cut down the middle for 2 chicken halves.
- Step 3
- Spread chopped onions over bottom of a 33 x 23-cm (13 x 9-in.) pan and place chicken halves on top, skin side up.
- Step 4
- In a bowl, mix remaining chicken ingredients. Pour sauce over chicken and roast for 1 hour 15 minutes or until internal temperature reaches 82 ºC (180 ºF). Baste chicken a few times while it cooks.
- Step 5
- While chicken cooks, mix all sesame broccoli ingredients in a large bowl. Place on parchment-lined baking sheet and roast for 15 minutes for crispy broccoli, or a little longer for more tender broccoli (20 minutes).
- Step 6
- When ready to serve, cut chicken halves into quarters. Pour orange and maple sauce over chicken and serve with sesame broccoli and basmati rice.
